Google Earth Pro doesn't install in sophisticated paths which means that you will have to follow the usual procedure to uninstall this program.
Go to Finder > Go > Applications and locate Google Earth Pro in the list. Once you located it, drag and drop it into the Trash. Right click the trash icon in the dock bar and choose Empty Trash. This will uninstall the program and delete any other files that you might have there.
You can't improve the resolution of those images unless Google has updated them. As I know, you can watch the images only to a point and that's it. To have a bigger resolution, Google needs to add the images, but if you're trying to see paste the maximum level of zooming option, then it will display as it is.
I've searched for options and ways on how to increase the resolution quality/size, but I didn't find anything.

I may be interested in purchasing the professional version of Google Earth to look at a mountainous region of India.

You can't check the exact altitude because the height of the mountains increases and decreases, but you can zoom to a level where the scale on the map is set to 20meters. You can check this information going to the Google Maps while switching to satellite. Zoom in at maximum and then you will see exactly how much you can see and the level of zoom.
